Classic Dry White Semillon (CDW). This is a classic ageing grape that goes through three distinct stages of life. Right now it is changing from it herbaceous young stage to a more creamy wheaty stage while still be refreshing. Eventually it brings on a lot of colour and texture and goes into a toasty stage.
